Curried Lamb Chops is a modern Fusion recipe for a dish of lamb chops with a curry coating served with a curried sauce that makes an excellent Valentine's day dish. The full recipe is presented here and I hope you enjoy this classic Mediterranean version of: Curried Lamb Chops.

Ingredients:
1 rack of lamb, separated into individual chops
1 tbsp curry powder
salt and freshly-ground black pepper, to taste
1 tbsp oil
1 tbsp butter
2 tbsp finely-chopped shallots
60ml dry white wine
60ml fresh carrot juice
1 tsp white wine vinegar
120ml chicken stock
1 tbsp honey
1 tbsp chopped coriander leaves
1 pinch of curry powder
Method:
Combine the curry powder, salt and black pepper and rub all over the lamb chops. Heat the oil in a frying pan and when hot add the meat and brown quickly on all sides. Transfer to a grilling tray and set under a medium grill and cook (broil) to your desired level of done-ness (about 6 minutes per side).
Meanwhile add the butter to the pan used to fry the lamb. When melted add the shallot and fry until soft (about 6 minutes). Add the white wine to deglaze the pan (stir to remove and dried sediment) then add the carrot juice, vinegar, chicken stock, honey and coriander leaves, along with a pinch of the curry powder. Allow the sauce to reduce and thicken then serve with the lamb.
