Curried Corn

Curried Corn is a traditional Somalian recipe for a classic stew of sweetcorn cooked in coconut milk flavoured with onions, garlic and curry powder and which is typically served as an accompaniment. Ingredients:

1 tbsp butter
1 onion, coarsely chopped
1 garlic clove, minced
1/2 tsp curry powder (any with lots of chillies)
800g sweetcorn (either frozen or cut from the cob)
1/2 tsp cornflour
250ml coconut milk
2 medium onions, blanched, peeled and coarsely chopped
salt and black pepper to taste

Method:

Heat the butter on medium heat until foaming then add the onion and garlic. Cook until lightly browned, stirring occasionally. Add the curry powder, ensuring you stir to incorporate thoroughly. Add the sweetcorn and cook for about 5 minutes, stirring frequently.

Meanwhile combine the cornflour with the coconut milk, stirring frequently to prevent lumps. Add this mixture to the sweetcorn and stir to combine. Add all the remaining ingredients and bring to a simmer.

Lower the heat as much as possible and cook for 7 minutes, with frequent stirring. (You are aiming for a fairly dry mixture.) Serve immediately.
