Ingredients:
140g curly dock seed flour
140g unbleached white flour
1 tsp salt
240ml water
oil for greasing
Method:
Combine all the dry ingredients in a mixing bowl. Add enough water to bring all the ingredients together as a pliable (but not too soft) dough.
Turn the dough out onto a lightly-floured work surface and roll out thinly. Cut into shapes and transfer to a well-oiled baking tray. Transfer to an oven pre-heated to 175°C and bake for about 5 minutes. Remove from the oven, turn the crackers over then return to the oven and cook for a further 5 minutes, or until crisp.
Allow to cool on wire racks before serving or storing.
