This is a classic dessert of milk curdled with lemon juice that's drained, blended with cream, sweetened and served.

Ingredients:

600ml (2 1/2 cups) cold, whole, milk
1 tbsp lemon juice
Cornish cream, to serve
caster sugar, to serve

Method:

Mix the milk and lemon juice then pour into a pan and heat gently (do not boil) until the curds form. Take off the heat and pass through a fine-meshed sieve lined with muslin. Allow the liquid whey to drain through and discard.

Chill the curds in the refrigerator and serve accompanied by Cornish cram and caster sugar.
