These sweet dough fritters are a common snack and street fool throughout Cameroon.

Croquettes de Mboa (Cameroonian Croquettes) a classic Cameroonian recipe for a snack of sweet flour, egg, margarine and milk dough fritters.

Ingredients:

1kg plain flour
4 eggs
80g margarine
sugar to taste (at least 200g)
100ml milk (about)
1/4 tsp freshly-grated nutmeg
2 tsp vanilla sugar
oil for deep frying

Method:

In a bowl, mix together the flour, sugar, nutmeg and vanilla sugar. Mix well to combine.

Add the softened margarine and mix in with your fingertips until the mixture resembles crumbs.

Add the eggs and mix well to combine. Now work in enough of the milk to bring the ingredients together as a dough (the dough should be dry and should not stick to the hands).

Heat oil in a deep fryer to 180°C. Form the dough into a ball and turn out onto a lightly-floured work surface. Roll out to about 15mm thick then cut into shapes (rounds, ovals, diamonds, triangles etc).

Drop the dough in small batches into the hot oil and deep fry until golden brown. Turn out to drain on kitchen paper as you cook the next batch.

Serve warm, dusted with a little extra sugar.
