Croquette de Marron (Chestnut Croquettes)

Croquette de Marron (Chestnut Croquettes) is a traditional Luxembourger recipe for a classic dessert of croquette made from a blend of sweet chestnut puree, butter and egg yolks, coated in egg whites and breadcrumbs that are fried and served warm. Ingredients:

500g sweet chestnut puree
60g butter
3 eggs, separated
60g sugar
100g breadcrumbs
oil for frying

Method:

Cream together the butter an sugar then beat in the egg yolks, one at a time. Work this mixture into the chestnut puree then cover and chill in the refrigerator for at least 2 hours.

In the meantime, beat the egg whites until stiff. Take the chestnut mixture from the refrigerator and shape into small balls. Dip each one of these, first into the egg whites and then into the breadcrumbs, ensuring that they are evenly and completely coated.

Heat oil in a wok or deep skillet and deep fry the croquettes until golden brown. They can be served as they are, or can be accompanied with a simple syrup made by boiling together honey and water.
