Though the leaves of wood avens are rather insipid, I've been looking for a decent way of using them up. I think this crisp fried version works best (think of the 'crispy seaweed' [actually cabbage] you get in Chinese restaurants). You can serve these sweetened with sugar or spiced with chilli flakes and black pepper. The use of butter is important here as it imparts a lot of flavour.
Ingredients:
5 handfuls of wood avens leaves, coarsely chopped
2 garlic cloves, crushed
generous knob of butter
sugar, to sweeten or chilli flakes and freshly-ground black pepper, to flavour
Method:
Place a frying pan over medium heat. Once hot add the butter and as soon as it starts to foam add the garlic. Fry for 30 seconds so it infuses the butter (but do not allow to burn). Now add the wood avens (herb bennet) leaves and stir to coat in the butter. The leaves will absorb the butter so you might have to add more at this point.
Keep cooking until the leaves turn crispy. Turn onto a plate and season as you like (sea salt is good, too). These are excellent served with a beer and also make a good accompaniment to spicy food.
