Cretons de Porc is a traditional Canadian recipe (from Quebec) for a classic pate-like dish of minced (ground) pork cooked with breadcrumbs, onion and cloves in a milk base that's turned into a bowl and allowed to set before serving. Ingredients:
500g minced pork
250ml dry breadcrumbs
1 onion, grated
salt and freshly-ground black pepper, to taste
2 cloves, ground
cinnamon, to taste
250ml whole milk
Method:
Stir together the pork, breadcrumbs and onion in a pan. Mix in the cloves and cinnamon then season to taste with salt and black pepper.
Stir in the milk then bring to a simmer. Cook gently for 60 minutes, stirring frequently.
Take off the heat and set aside to cool. Turn into a dish and pack down. Chill in the refrigerator then turn out onto a plate, garnish with flat-leaf parsley and serve.
