Here is a very interesting modern recipe that I cam across in Equatorial Guinea. In essence it's a curd that's made with a blend of bananas and lemon juice, rather than just the more usual bananas. It can be used as a spread for bread but is excellent as an icing or frosting for cakes.

Ingredients:

500g ripe bananas
3 tbsp lemon juice
125g butter, diced
4 egg yolks

Method:

Peel the bananas, place in a heat-proof bowl and mash until smooth then work in half the lemon juice to thin the mixture a little.

Now mix in the remaining lemon juice, butter and egg yolks. Beat to a smooth paste then set the bowl over a pan of barely-simmering water. Cook, stirring constantly until the mixture thickens to the consistency of a curd. Take off the heat.

Spoon the curd into jars that have been sterilized and warmed in the oven. Secure the lids then allow to cool. Label and store. The curd will keep for up to 6 months if the jars are not opened.
