I love tomatillos, but they’re not exactly easy to get around here. Which is why I had to grow my own. Of course, now I have a glut and this recipe was one of the ways to use them up.
Ingredients:
2 medium tomatillos
1/2 jalapeño, chopped (I like the heat so don’t bother removing the seeds)
60ml (1/4 cup) buttermilk
60ml (1/4 cup) sour cream
60ml (1/4 cup) mayonnaise
4g (1/4 cup) coriander (cilantro)
1 spring onion
1 clove garlic, minced/grated
1 tbsp lime juice
salt and freshly-ground black pepper to taste
Method:
Making this recipe is as easily as putting everything in a food processor, puree to a paste then season to taste with salt.
Optionally, if like me, you like a bit of smokiness you can grill (broil) the tomatillos and jalapeño until slightly charred and blackened on all sides, about 5-10 minutes.
My wife likes this when I replace some or all of the sour cream and mayonnaise with avocado.
