Samp is a classic South African accompaniment made with decorticated white maize (hominy). This version is cooked with cream and sweetened with a little sugar and is typically served to accompany curries and stews.
Place the samp in a bowl, rinse well with cold water then cover with water and set aside to soak for a couple of hours.
Drain the samp once again, turn into a saucepan and cover with 750ml (3 cups) water. Bring to a boil and cook for about 100 minutes until cooked through and soft.
Now stir in the brown sugar until dissolved and add the vegetable stock. Bring to a simmer and stir to combine. Now add the cream a little at a time, simmering until the samp is well separated and the grains are not separate.
