Crab Cakes

Crab Cakes is a modern fusion recipe for a classic cake made of crab meat, garlic, chilli and breadcrumbs bound with egg that are breaded, fried until golden and finished in the oven and which makes an excellent dish for Christmas or New Year. Ingredients:

3cm length of ginger, peeled
2 red chillies (remove the seeds for a milder effect)
250g white crab meat
2 spring onions, finely sliced
1 tbsp coarsely chopped coriander leaves
2 eggs
1 tbsp milk
8 tbsp fresh breadcrumbs
25ml olive oil
plain flour, to dust

Method:

Combine the ginger and chillies in a food processor and pulse until finely chopped. Turn the mixture into a bowl then mix with the crab meat. Crack in an egg and stir to combine. Add 4 tbsp of the breadcrumbs and stir once more.

Divide the crab mixture into six equal portions and shape these into thick patties. Arrange on a baking tray lined with clingfilm (plastic wrap) and set aside to chill in the refrigerator for 20 minutes.

After this time, beat the remaining egg in a bowl with the milk. Pour this mix into a dish. Arrange plain flour and the remaining breadcrumbs on separate dishes. Remove the crab cakes from the refrigerator and dust with the flour. Dip in the egg then dip in the breadcrumbs to coat. Shake off the excess and set aside as you coat the remaining crab cakes.

Heat the oil in a large frying pan, add the crab cakes and fry for about 3 minutes per side, or until crisp and golden brown all over. Transfer the carb cakes to a baking tray then place in an oven pre-heated to 180°C (360°F, Gas Mark 4) and bake for about 8 minutes, or until cooked all the way through.

Serve warm, accompanied by a sweet chilli dipping sauce and a crisp green salad.
