This is a classic Scottish recipe for a chowder-like soup of crab in a potato and milk base.
Crab and Potato Soup a Classic Scottish recipe for a festive starter of a chowder-like soup of crab meat, pureed potato and fish stock in a milk base that's excellent for Christmas or New Year.
Ingredients:
500g potatoes
600ml stock (fish stock is best)
225g crab meat, flaked
1 garlic clove, crushed
1 tbsp fresh chives, chopped
150ml milk
salt and freshly-ground black pepper, to taste
Method:
Peel and chop the potatoes then combine with the stock in a saucepan. Bring the mixture to a boil then reduce to a simmer and cook for about 20 minutes, or until the potatoes are tender.
Take off the heat and blend to a purée then return to the pan. Add the crab meat along with the garlic and chives. Season to taste with salt and black pepper then cook gently for 5 minutes.
Stir in the milk and allow to heat through (but do not boil). Ladle into warmed soup bowls and serve.
