Soda Bread

This is a more basic soda bread, a classic standby that could be made in the home. You really do need the strong bread flour in this for the flavour, though. The acidity of the buttermilk activates the bicarbonate of soda, helping the bread to rise.

Ingredients:

225g (1/2 lb) wholemeal flour
225g (1/2 lb) strong white bread flour
30g (1 oz) butter
300ml (1 1/4 cups) buttermilk
1 tsp salt
1 tsp cream of tartar
1 tsp bicarbonate of soda

Method:

Sift together the flours, salt, cream of tartar and bicarbonate of soda into a bowl. Dice the butter, add to the bowl and rub into the flour mix. Form a well in the centre and add just enough of the buttermilk so that the ingredients come together as a soft, dry, dough.

Divide the dough into two pieces and turn out onto a floured work surface. Working quickly, pat the two components into flat cakes. Transfer the breads onto a floured baking tray, spacing them some distance apart.

Score each loaf in quarters with a sharp knife then immediately transfer to an oven pre-heated to 200ºC (400ºC) and bake for about 30 minutes, or until the loaves are nicely browned, well risen and sound hollow when tapped on the base.

This type of bread is best served warm and as it does not keep well it's best served on the day it's made.
