Cornish Fish Cakes

Given that it's a fish and potato producing region, it's hardly surprising that these have been put together in Cornish cuisine to make fish cakes. The example here uses haddock as a base, but you can use any flavoursome white fish that flakes readily.

Ingredients:

250g (9 oz) haddock, boiled to cook
250g (9 oz) cooked and mashed potatoes
4 tbsp parsley, finely chopped
breadcrumbs, toasted in a little butter until golden
1 egg, beaten
plain flour, for dusting
salt and freshly-ground black pepper, to taste

Method:

Skin, bone and flake the fish flesh then mix in a bowl with the mashed potatoes. Mix in the parsley then season to taste.

Using floured hands, shape the mixture into small, flat cakes and dust with flour.

Beat the egg in a bowl, dip the fishcakes in the egg then coat with the toasted breadcrumbs.

To cook fry in oil or bacon fat for about 5 minutes per side, or until golden brown in colour and heated through.

Serve hot.
