Ingredients:

1.2kg plain flour
1.2kg corn meal (polenta)
450g dry milk powder
240g sugar
4 tbsp baking powder
2 tsp salt
360g shortening

Method:

Stir the flour, cornmeal, milk powder, sugar, baking powder and salt together in a bowl. Cut in the shortening until the mixture resembles coarse breadcrumbs. This will store in a covered airtight container for several weeks.

To make corn muffins simply place 450g of the mixture in a large mixing bowl. Form a well in the centre and combine 1 beaten egg and 180ml water before pouring into the well. Stir until just smooth then pour into a greased muffin tin until the cups are about 3/4 full. Bake in an oven pre-heated to 190°C for about 15 minutes until the muffins are risen and golden and a toothpick inserted in the centre comes out clean.
