Cool Whip

Cool Whip is a traditional American recipe for a classic copycat version of a whipped topping made with milk powder and set with gelatine that's whisked until fluffy and which can be used immediately or frozen until needed. Ingredients:

1 tbsp gelatine
2 tsp cold water
3 tbsp boiling water
120ml ice water (water that has been sitting on ice)
80g milk powder
4 tbsp sugar
3 tbsp oil
2 tsp vanilla extract

Method:

Chill a small bowl either in the fridge or by sitting in an ice bath. Meanwhile mix the gelatine and 2 tsp cold water and allow to soften for 10 minutes before adding the boiling water. Stir until all the gelatine has dissolved and cool until tepid.

Add the ice water and dry milk powder in the chilled bowl and using an electric whisk beat on high speed until the mixture forms stiff peaks. Then add the sugar and vanilla extract (beating all the while) before adding the oil and gelatine.

Place in the fridge for 15 minutes to set then transfer to the freezer until ready for use.

If you need more of the cool whip then do it in several batches. The volumes above have been worked out to ensure that everything sets (due to temperature control). If you double the quantities then it's likely it simply won't set properly.
