Confiture de Banane (Banana Jam)

Ingredients:

600g Mashed Banana
400g Sugar
4 Tablespoons Lemon Juice

Method:

Combine all the ingredients in a saucepan over medium heat and slowly bring to a boil, stirring occasionally.

Let the jam boil for 5 minutes. At this point take the jam off the heat then pour into sterilized jars that have been warmed in the oven. Secure the lids and set aside to cool.

Store in the refrigerator (it will keep, unopened for a few weeks).

This jam is great on toast, you can spread it on pancakes, you can use it in muffins and it’s perfect for a milkshake or as a base for cakes. It's even good served to accompany curries.
