Clear Soup with Wakame

Method:

Place the wakame in a bowl and soak in cold water for 10 minutes. In the meantime, add the dashi to a large pan and slowly bring to a boil. Add the sake and soy sauce to the dashi stock.

When soaked, drain the wakame and wash thoroughly then cut into 2cm lengths. Add the wakame to the dashi stock and simmer for 1 minute only. Immediately ladle into warmed soup bowls and serve.
