Accompaniments: An Irish recipe for a classic salad of boiled and cooled new potatoes in a mustard vinaigrette dressing with spring onions and chives.
Ingredients:
675g new (or waxy) potatoes, scrubbed but not peeled
4 sprigs fresh mint
2 tbsp white wine vinegar
1 tsp Dijon mustard
5 tbsp neutral vegetable oil (groundnut oil, grapeseed oil, sunflower oil)
1 small bunch of spring onions, finely chopped
sniped chives, to garnish
salt and freshly-ground black pepper, to taste
Method:
Bring a pan of water to a boil, add the potatoes and mint and cook until tender. Drain the potatoes and either halve or quarter (depending on size).
In the meantime, mix together the vinegar, mustard and oils. Season to taste then beat with a whisk to combine.
Pour the dressing over the potatoes whilst still warm, add the spring onions and toss to combine. Turn into a bowl and allow to cool.
