Claclo (Ivorian Plantain Fritter)

The name claclo necessarily evokes a lot of things to people who know it, a fairly typical taste with the addition of ginger and garlic. It should also be noted that it is often cooked in palm oil. “claclo”, or “klaklo”, means donut or pancake depending on the region and the preparations.
At the heart of the “claclo”, however, is a key ingredient of Ivorian cuisine: the plantain. The plantain, although belonging to the same family as bananas, is larger and has a different flavor. It is a staple food in Ivory Coast and is used in multiple ways. We often serve claclo with alokos.
This is a savoury fritter that can be serves as an accompaniment or as a snack. It is a common street food.
Ingredients:
1 very ripe plantain, roughly chopped
A small piece of grated fresh ginger
1 clove of garlic, chopped
1 small onion chopped
Salt and pepper
30g of flour
Frying oil
Method:
In a salad bowl, pour the plantains, ginger, garlic, onion and season with salt and pepper. Puree using an immersion blender.
Add the flour and mix well.
Scoop out a small amount of dough with a tablespoon (or with your hands) and pour it into the hot oil. Fry for a few minutes on each side and enjoy immediately.
