Citron och basilikafisk (Lemon and Basil Fish) a classic Swedish recipe for a dish of white fish fillets cooked in a creme fraiche base flavoured with lemon, garlic and lemon pepper that's finished with cheese.

Ingredients:

600g white fish fillets
1 tsp salt
3 garlic cloves
3 tbsp basil, chopped
200ml crème fraîche
2 tbsp lemon juice
finely-grated zest of 1/2 lemon
lemon pepper, to taste
50g grated cheese

Method:

Salt the fish fillets then arrange in an ovenproof dish. Peel and slice the garlic. Mix the garlic with the basil then scatter over the fish.

In a bowl, mix together the crème fraîche and the lemon juice, lemon zest and lemon pepper to form a sauce. Pour this sauce over the fish then scatter over the grated cheese.

Transfer to an oven pre-heated to 200°C and roast for about 20 minutes, or until the fish flakes easily with a fork.

Serve hot, accompanied by boiled new potatoes and baked tomatoes (you can bake these in the dish with the fish, if desired).
