Ingredients:

500g plain flour
300g sugar
100g butter
100g margarine
1 tbsp lard (optional), melted
3 eggs
250ml milk
2 tsp baking powder
1 tsp freshly-grated lemon zest
granulated sugar, to dust

Method:

In a bowl, combine the flour with the butter, margarine and melted lard (if using) stir in the sugar and mix in the eggs then add enough of the milk to bring the ingredients together as a soft dough. Immediately beat in the baking powder and lemon zest then turn into a cake mould (this should be either oval or a ring mould).

If desired, glaze the top with beaten egg then scatter with granulated sugar. Transfer to an oven pre-heated to 170°C and bake for about 60 minutes, or until golden brown and cooked through. Turn out onto a wire rack and allow to cool before serving.

A common variant is to include chopped rosemary in the batter and to garnish with rosemary sprigs when serving.
