Chucula a Classic Ecuadorean recipe for a dessert of plantains cooked in sweetened milk base with cinnamon that's finished with goat's cheese and vanilla extract.

Ingredients:

5 ripe plantains
1l milk
500ml water
200g freshly-grated cheese (a goat's cheese in particularly good in this)
100g brown sugar
2 cinnamon sticks
1 tbsp vanilla extract

Method:

Peel and slice the plantains. Combine in a pan with the water, brown sugar and cinnamon. Bring to a simmer, cover and cook for about 20 minutes, or until tender.

Stir in the milk, bring to a boil then turn half the mixture into a blender and process until smooth. Pour this mixture back into the pot and stir to combine.

Add the cheese and vanilla extract. Stir to combine, take off the heat and remove the cinnamon sticks. Turn into a bowl and set aside to cool.

Serve chilled.
