Christmas Sugar Cookies a Classic American recipe for a sweet dough cookie (biscuit) that's prepared in Christmas shapes.

Ingredients:

200g butter or margarine, softened
300g sugar
1 tsp vanilla extract
3 eggs
420g plain flour
2 tsp cream of tartar
1 tsp salt
1 tsp baking powder


Method:

In a bowl, cream together the butter (or margarine) and sugar until light and fluffy. Add the eggs, one at a time, beating thoroughly to combine after each addition.

Work in the remaining ingredients until you have a dough. Cover in clingfilm and chill in the refrigerator for at least 3 hours (best over night).

After this time, turn the dough onto a well-floured work surface and roll out thinly.

Cut into festive shapes with biscuit (cookie) cutters.

Sprinkle a little sugar over the top then carefully transfer to a greased baking tray. Place in an oven pre-heated to 170°C and bake for about 8 minutes, or until cooked through and just lightly browned around the edges.

Transfer to a wire rack to cool.

If desired, you can decorate with icing and coloured sugar.
