Ingredients:

For the Base:
120g chocolate wafers crumbs
3 tbsp butter, melted

For the Filling:
240g cream cheese, softened (or you can use my home-made cream cheese recipe to prepare your own)
150g sugar
35g plain flour
3 eggs
120ml sour cream
1 tsp vanilla extract
100g dark chocolate chips (or a chocolate bar, chopped)

Method:

Combine the chocolate wafer crumbs and butter in a bowl and mix thoroughly. Press into the base and up the sides of a 22cm diameter springform cake tin. Transfer to an oven pre-heated to 170°C and bake for 10 minutes. Remove from the oven and set aside.

Beat the cream cheese in a bowl until soft then beat in the sugar and flour, mixing until all the sugar has melted. Add the eggs, one at a time, beating thoroughly to combine after each addition. Blend in the sour cream and the vanilla extract then stir in the chocolate pieces.

Pour over the crust then transfer to an oven pre-heated to 160°C and bake for about 50 minutes, or until the filling is set. Remove from the oven then loosen the rim of the tin. Allow to cool completely before removing the rim. Chill in the refrigerator before slicing into wedges and serving.
