Chocolate Biscuits: British chocolate biscuit (cookie) sandwiched in pairs with chocolate buttercream icing.

Ingredients:

100g self-raising flour
25g cocoa powder
50g caster sugar
100g butter
vanilla extract, to taste
chocolate buttercream icing, to sandwich
icing sugar, for dusting

Method:

Sift together the flour and cocoa powder into a small bowl and set aside.

Using an electric whisk, cream together the sugar and butter until light and fluffy. Stir in the flour and cocoa to form a stiff paste then add the vanilla extract to taste.

Divide the mixture into 16 pieces and roll these into balls about the size of a walnut. Flatten slightly and sit on a greased baking tray (allow sufficient distance between them to allow the biscuits to spread).

Flatten the balls with a fork dipped in cold water (this marks the tops) then transfer to an oven pre-heated to 170°C (Gas Mark 5) and bake for 10 minutes.

Allow to cool on the tin for 5 minutes then transfer to a wire rack to cool completely. In the meantime, prepare the buttercream.

When the biscuits have cooled completely use the buttercream to sandwich pairs of biscuits together. Dust with icing sugar and serve.
