Chive blossoms lend a simple omelette a delicate oniony flavour that make this a perfect breakfast dish.

Ingredients:

4 eggs
4 tbsp milk
2 tbsp chives, minced
3 tbsp butter
12 chive blossoms, gently washed and dried
salt and freshly-ground black pepper

Method:

Whisk together the eggs, milk, salt, black pepper and chives in a bowl. Melt the butter in a frying pan then pour in the egg mixture. As the edges of the omelette begin to set reduce the heat a little and with a spatula lift the edges of the omelette so the uncooked egg runs to the bottom of the pan.

Once the eggs are cooked sprinkle the chive blossoms over the top, fold the omelette over and allow to cook for 2 minutes more before sliding onto a plate, halving and serving.
