This is the Chinese take on an European style biscuit (cookie) which are typically served as a dessert after the meal itself. This recipe is sufficient to prepare 50 cookies.
Ingredients:
675g plain flour
1/2 tsp baking powder
1/2 tsp salt
100g slivered almonds
225g vegetable fat, finely diced
225g white sugar
1 egg, lightly beaten
1 1/2 tsp almond extract
50 whole, blanched, almonds to decorate
Method:
Sift together the flour, baking powder and salt into a bowl.
Place the slivered almonds in a food processor and pulse until finely chopped. Add the flour mixture and continue pulsing until all the ingredients are thoroughly mixed.
Turn the mixture into a bowl then add the vegetable fat. Work this into the flour mixture with your fingertips until the ingredients resemble fine crumbs. Stir in the sugar then add the egg and almond extract. Work into the flour until the ingredients come together as a dough then knead the dough until soft and pliable (but do not over-work, the dough should still be firm enough to be handled).
Divide the sough into 2.5cm balls. Arrange these at least 5cm apart on ungreased baking trays and flatten them into circles with the back of a spoon. Press a whole almond into the centre of each one.
Transfer to an oven pre-heated to 160°C and bake for about 16 minutes, or until the tops of the biscuits are just beginning to brown. Remove from the oven and arrange on a baking tray to cool completely before storing or serving.
