Ingredients:

2 tbsp butter
1 mdium onion, chopped
80g pickeled jalapeño peppers, chopped
450g tinned tomatoes, drained
1 jar chopped pimento, drained
150g Cheddar cheese, grated
salt and black pepper, to taste

Method:

Melt the butter in a pan and use to fry the onion for about 4 minutes then add the jalapeño chillies, tinned tomatoes and pimento. Bring to a boil then simmer for about 12 minutes then add the cheese and season to taste. Mix thoroughly and continue cooking until the cheese has melted.

Serve immediately with rice.
