Ingredients:
4 tsp fresh lemon juice
4 tsp walnut oil (or beech nut oil)
salt and freshly-ground black pepper, to taste
200g chickweed leaves and tender stems
Method:
Add the lemon juice to a large bowl and gradually whisk in the oil until emulsified. Season with salt and freshly-ground black pepper then add the chickweed and toss until evenly dressed.
Serve immediately. If desired you can garnish the salad with a few shavings of Parmesan cheese.
