Ingredients:
4 chicken breasts, skinned and boned
1/2 tsp salt
4 tbsp fresh lemon juice or lime juice
For the Marinade:
150ml natural yoghurt
2 garlic cloves, crushed
3cm length of ginger root, peeled and grated
1 tsp ground cumin
1/2 tsp ground coriander seeds
1/2 tsp ground turmeric
oil or melted butter, for brushing
For the Sauce:
150ml natural yoghurt
1 tsp mint sauce
Method:
Cut the chicken meat roughly into 3cm cubes. Sprinkle these with the salt and lemon juice then set aside to stand for 10 minutes.
After this time, prepare the marinade. Combine the yoghurt, garlic, ginger and ground spices in a small bowl and beat with a whisk to combine.
Thread the chicken pieces onto skewers then brush the chicken with the marinade. Cover and set aside to marinade for at least 2 hours (over night is best).
To cook, place the chicken skewers on your barbecue over hot coals, turning and brushing frequently with oil or melted butter as they cook. Continue cooking until lightly charred on the outside and thoroughly cooked through (about 15 minutes).
In the meantime whisk together the yoghurt and mint sauce to form a dipping sauce.
Accompany the chicken tikka skewers with the dipping sauce and serve with rice and naan breads.
