Method:

Joint the chicken and place in a bowl. Mix the lemon juice, garlic, thyme, paprika, cumin and cayenne pepper together and pour over the chicken. Allow to marinate in the fridge for at least six hours (over night is best). Remove the chicken from the marinade and dust with the Ras el hanout. Grill the chicken on a barbecue (or under a grill) until it has browned all over.

Place the chicken in a tagine and strain the marinade before adding to the chicken along with the chicken stock the coriander and the olives. Add the lid to the tagine and cook for 45 minutes, or until the chicken is very tender.

Place the chicken pieces on a bed of couscous and thicken the remaining sauce with the cornflour. Spoon over the chicken and couscous then serve.
