Ingredients:
1 x 1.5kg chicken, cut into serving pieces
80ml cooking oil
2 onions, sliced
2 bouillon cubes or Maggi cubes
3 tbsp tomato paste
salt, pepper and cayenne pepper to taste
Method:
Fry the chicken in oil until golden brown all over. Combine the pepper, sliced onions and 1 tbsp salt. Mix together then take the chicken out of the oil and use the oil to fry the onion mixture until soft. Add the bouillon cubes and tomato paste and stir for 6 minutes.
Return the chicken to the pan and add a little water to form a smooth paste and simmer until the mixture is almost dry. Serve on a bed of rice.
