Chicken Chettinad
Chicken Chettinad is a traditional Indian recipe for a classic Chettinad curry of chicken in an aromatic and spicy gravy based on curry leaves. Chettinad is an historic South Indian region that is located mainly in the Sivaganga district historically ruled by Ramnad kingdom of Pandya Nadu and has a small portion extending into the Pudukottai District in Tamil Nadu, India. The name literally means "land (nadu) of the Chettiars", which refers to the social caste of mercantile bankers. The Chettiars are known to be traders in salt and spices and this has a direct impact on the local style of cuisine that is both aromatic and spicy. The chicken chettinad ranks amongst the region’s most well-known dishes. There are two main types of chicken chettinad, however, one uses coconut milk, as here in the preparation of the masala and the second type employs yoghurt for the masala instead.
Ingredients:
For Marination:
500g (1 lb) chicken, cut into medium-sized curry cuts
1 tsp red chilli powder (eg Kashmiri chilli)
½ tsp turmeric
salt to taste
½ lime (juice only)
For the Masala:
3-4 whole cloves
2 green cardamom pods
1 tbsp black peppercorns
1 tsp cumin seeds
1 tbsp coriander seeds
1 tsp fennel seeds
3cm (1 inch) length cinnamon
3-4 dried red chillies
75g (1 cup) fresh coconut, grated
salt to taste
water as required
For the Gravy
1 tbsp oil
1 cup onion, finely chopped
1 cup tomato, finely chopped
1 tbsp
ginger-garlic paste
7-8 curry leaves
