Chevra

Chevra is a traditional South Africa recipe (from Cape Malay cuisine) for a classic snack of deep fried potatoes, cereals and slangetjies with nuts and fruit that is typically served for special occasions and where the potatoes can be coloured before cooking. This is crunchy spiced mixture that is often served as a snack on special occasions such as weddings or Eid.

Ingredients:

100g Post Toasties (a form of cornflakes)
100g Rice Krispies
200g slangetjies (optional)
1 tbsp fennel seeds
1 large potato (or sweet potato)
250ml sunflower oil
1 small onion, sliced into thin rings
4 small green chillies
120g giant salted peanuts
120g sultanas
125g whole mixed nuts
1 tsp hot chilli powder (or more, to taste)
salt, to taste

Method:

Combine the cereals and slangetjies (if using) in a baking dish. Stir in the fennel seeds then transfer to an oven pre-heated to 200°C and bake for about 8 minutes, or until golden (take care they do not burn).

Coarsely grate the potato or sweet potato into a bowl of cold water. Stir the potato with your hand to wash out the excess starch then turn into a colander to drain. Squeeze out as much of the excess moisture from the potatoes as you can.

Heat the sunflower oil in a wok, add the potato and fry, stirring frequently, until cooked through and golden brown (about 8 minutes). Remove from the wok with a slotted spoon and drain on kitchen paper.

Add the onion to the oil and fry for about 8 minutes, or until crisp and golden brown. Remove with a slotted spoon and drain. Dip the chillies in the oil and drain.

Now mix together the cereals, potato, onion and chillies in a bowl with all the remaining ingredients. Store in air-tight containers until needed.

This snack is often adapted for different holidays by colouring the potatoes with food colouring before frying (eg Orange for Halloween, red and green for Christmas etc).
