Ingredients:

150g sweet chestnut flour (buy ready make or make your own from ground, dried, sweet chestnuts)
50g white flour
1 pinch salt
8g (1 packet, instant, active, yeast)
150g sugar
4 whole eggs
5 dessert spoons extra-virgin olive oil
1.25l milk
100g hazel nuts, finely chopped
100g ground almonds
100g plain chocolate

Method:

Combine the flours, salt and yeast in a bowl. Meanwhile, beat together the eggs, sugar, oil and milk until thoroughly combined. Whisk to combine then pour into the flour mixture. Stir to combine then add the ground almonds and hazel nuts.

Beat the batter well then pour into a well-greased cake tin. Transfer to an oven pre-heated to 180°C and bake for about 30 minutes, or until the top of the cake is golden and a skewer inserted into the centre emerges cleanly.

Allow the cake to cool completely in the tin then turn out onto a serving plate. Melt the chocolate with 1 tbsp water in a bain-marie (double boiler) and use to decorate the top of the cake. Allow the chocolate to cool and solidify then cut into wedges and serve.
