This is an interesting Cornish basic bread. Originally it would have been made from the two staples guaranteed to grow in the relatively poor Cornish soil, potatoes and barley flour flavoured with cheese. This version uses plain wheat flour to make the mixture lighter.
Ingredients:
225g plain flour
1 tsp salt
3 tbsp baking powder
115g mature Cheddar cheese, grated
115g potatoes, cooked, mashed and passed through a sieve
milk, to bind
Method:
Sift together the four, salt and baking powder into a bowl. Stir in the cheese then mix in the mashed potatoes, using your fingertips to blend the ingredients.
Form a well and work in enough milk to bring the ingredients together as a soft, dry, dough. Form the dough into small rounds, handling them as little as possible (think scone size).
Arrange the dough on a floured baking tray then transfer to an oven pre-heated to 210ºC (400ºF) and bake for about 15 minutes, or until lightly browned. Serve warm.
