Char-grilled Bream

Bream is an excellent fish for barbecuing. This is a great dish for serving on the beach.

Ingredients:

2 small sea bream, gutted, scaled and cleaned
2 lemon slices
2 bayleaves
salt and freshly-ground black pepper, to taste

For Basting:
4 tbsp olive oil
2 tbsp lemon juice
1/2 tsp fresh oregano, finely chopped
1/2 tsp fresh thyme, chopped

fresh bayleaves, to garnish
fresh sprigs of thyme, to garnish
lemon wedges, to garnish

Method:

Take the cleaned fish and using a sharp knife cut 3 deep slashes into the body of the fish on both sides.

Place a lemon slice and a bayleaf in the body cavity of each fish. In the meantime, mix together all the ingredients for the baste in a bowl and whisk together with a fork. Liberally brush some of the baste mixture over the fish then place on a barbecue rack over hot coals. Barbecue for between 20 and 30 minutes, turning frequently and brushing with the baste mixture, until the fish is cooked through.

Transfer the fish to a serving dish. Garnish with the fresh bayleaves, thyme and lemon wedges and serve immediately.
