Chakri

Chakri, made with couscous in a cream base and topped with dried fruit is probably Gambia's most well known dessert. Here is the classic method for making it. I'm using pineapple and raisins as examples of dried fruit here, but use whatever you prefer.
Ingredients:
450g (1 1/2 cups) Couscous
2 tbsp unsalted butter
1/2 tsp nutmeg
For the cream:
300ml cottage cheese
300ml double cream
300ml Greek yogurt
150ml single cream
30g (1/4 cup) coconut powder
100g (1/2 cup) sugar
1 tsp vanilla extract
For the toppings:
dried Pineapple
dried Raisins
Method:
Combine the couscous, butter and nutmeg in a microwave-proof bowl. Pour over enough boiling water to cover sit a plate on top then set aside to soften.
In the meantime, beat together the cottage cheese, double (heavy) cream, Greek yoghurt and single cream in a bowl until well combined. Now work in the coconut powder, sugar and vanilla extract.
Transfer the couscous to a microwave and cook for 20 seconds.
To assemble the dish, divide the majority of the couscous between four serving dishes. Top with the cream mixture, followed by a spoonful of couscous, then garnish with the dried fruit and serve.
