Canella Biscuits is a modern British recipe for classic biscuit (cookie) of a flour, sugar, butter and vanilla dough bound with egg and flavoured with the Caribbean spice, canella, that are oven baked and cooled before serving. Sift the flour, canella, baking powder and salt into a bowl. Cut in the butter with a knife then use your fingers to finish rubbing in the butter until the mixture resembles fine breadcrumbs. Add the sugar and vanilla extract mix with a spoon then add the egg. If needed add just enough milk to bring the dough together.
Turn the dough onto a lightly-floured surface and knead until smooth and elastic. Wrap in clingfilm and refrigerate for 30 minutes then return the dough to the floured surface and roll out thinly. Use a crinkly pastry cutter to cut 12 biscuits from the dough. Transfer these to a greased baking tray and dust with a little cinnamon. Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 12 minutes, or until set and lightly golden in colour.
Allow to cool for 10 minutes on the baking tray before transferring to a wire rack to cool completely.
