Ingredients:

500g camel meat, cut into cubes
1 onion, finely chopped
2 garlic cloves, minced
1 tbsp harissa paste
1 tsp ground cumin
1 tsp ground coriander seeds
120ml olive oil
Salt and freshly-ground black pepper to taste
harissa sauce to accompany

Method:

In a bowl, mix together the chopped onion, minced garlic, harissa paste, ground cumin, ground coriander, olive oil, salt, and black pepper.

Add the camel meat cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.

Pre-heat your grill to medium-high heat.

Thread the marinated camel meat onto skewers.

Grill the kebabs for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired level of doneness.

Serve the camel kebabs with harissa sauce on the side.
