Cake de Fruta Confitada (Candied Fruit Cake) a Classic Ecuadorian recipe for a chocolate sponge cake containing candied fruit that is oven baked to cook.
Ingredients:
300g sugar
300g plain flour
1 tbsp baking powder
8 eggs
finely-grated zest from 1/2 lemon
200g dark chocolate
2 tbsp milk
50g butter
candied fruit, to taste
Method:
Beat the eggs in a bowl. Add the sugar and beat until pale and creamy. Sift together the flour and baking powder then add to the egg mixture along with the lemon zest. Continue beating until well mixed.
Melt the chocolate in a microwave or bain-marie. Allow to cool slightly, then fold into the batter along with the candied fruit (chop if large). Stir to taste, then spoon the batter into a greased and floured loaf tin.
Transfer to an oven pre-heated to 200°C and bake for about 40 minutes, or until golden brown on top and cooked through.
Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely before slicing and serving.
