Cajun Spicy Barbecued Chicken: Classic American recipe for a barbecue dish of chicken portions in a Cajun marinade that's cooked over hot coals,
Ingredients:
4 chicken portions
1 garlic clove
1 tbsp light muscovado sugar
3 tbsp paprika
2 tsp cayenne pepper
1 tsp dried oregano
1 tsp dried sage
1 tsp dried thyme
4 tbsp sunflower oil
2 tbsp lemon juice
salt and freshly-ground black pepper, to taste
Method:
Remove the skin from the chicken portions, then using a sharp knife make two or three deep slashes in the meat.
Cut the garlic clove in half and rub the cut surface over the chicken. Season the chicken with salt and black pepper.
In a bowl, mix together the sugar, spices and dried herbs. Rub this mixture all over the entire surface of the chicken. Sit on a plate and set aside to marinate for at least 2 hours.
When ready to cook, whisk together the oil and lemon juice in a bowl. Brush this mixture over the chicken then set the chicken on a barbecue over medium-hot coals. Cook for about 30 minutes, turning the chicken frequently and basting with the oil and lemon juice mix as you do so.
The chicken is cooked through when, as you pierce the thickest part of the flesh, the juices run clear.
Transfer the chicken to warmed plates and serve.
