Cajun Hot Sauce is a traditional American recipe (from Louisiana) for a classic hot sauce made with chillies and horseradish in a vinegar base. The full recipe is presented here and I hope you enjoy this classic American version of: Cajun Hot Sauce.

Ingredients:
72 small, hot, red chillies, stemmed and de-seeded
2 garlic cloves, minced
500ml water
2 tbsp granulated sugar
1 tsp salt
4 tsp fresh horseradish, grated
500ml vinegar
Method:
Combine the chillies, garlic and water in a pan. Cover and simmer until the chillies become very tender. Purée in a food processor or then combine the purée with the remaining ingredients in a saucepan.
Simmer, stirring occasionally, until the mixture thickens then pour into clean, hot, 350ml jars leaving 1.5cm head space. Seal, then process in a boiling water bath for 10 minutes.
