Cajun Crayfish Cornbread: Classic American recipe (from Louisiana) for a baked cornbread incorporating crayfish (crawfish), cheese and chillies, shown cut into squares and piled on a plate.
Ingredients:
400g cornmeal
1 tbsp salt
1 tsp baking soda
6 eggs
2 medium onions
80g sliced
jalapeño peppers
450g grated cheddar cheese
160ml olive oil
950g sweetcorn
950g crayfish (crawfish) tails
Method:
Combine the cornmeal, salt and baking soda in a large bowl. Beat the eggs together in a separate bowl.
Chop the onions and jalapeño peppers then add to the beaten eggs along with the cheese, oil, sweetcorn and crayfish (crawfish) tails. Mix thoroughly then combine this mixture with the cornmeal mix and beat together well.
Pour the mixture into a greased 30 x 35cm baking dish and place in an oven pre-heated to 190°C and bake for 55 minutes, or until set and golden brown in colour.
