Rosebay Willowherb (Fireweed) makes an excellent substitute for asparagus. You need young shoots stripped of any leaves for this recipe. It can be very difficult to identify the plant at this stage and the only certain way to ensure that you're cooking the correct plant is to collect (or buy) fireweed seeds and to plant them in your own garden.
Ingredients:
1 bunch fresh
rosebay willowherb shoots
45g butter
salt and black pepper to taste
Method
Bring a pan of lightly-salted water to a boil. Add the prepared rosebay willowherb (fireweed) and cook for 8 minutes, or until just tender. Meanwhile, melt the butter in a pan, add the rosebay willowherb and toss in the butter until coated. Season with salt and black pepper and serve.
This makes an excellent accompaniment to game and beef dishes.
