Combine the milk and sugar in a pan. Heat until the sugar dissolves then take of the heat and pour over the egg yolk in a bowl. Whisk to combine then return to the pan and heat to thicken (but do not allow to boil) and take off the heat. Cream the butter in a bowl then work in the custard when cool and flavour with the coffee essence.
This can be used to both sandwich cake halves together and to decorate the cake.
