This is another recipe that's also prepared in Rwanda. Here cassava meal is used to prepare cassava porridge, a classic accompaniment.
Ingredients:
160g cassava meal
3 tbsp oil or spiced butter
Method:
Bring 1l salted water to a boil. Stir in the oil (or butter) then whilst whisking constantly add the cassava meal in a slow, steady stream. Beat the mixture until smooth then continue cooking until the mixture has thickened and the cassava meal is no longer gritty.
If necessary, add another 500-600ml boiling water, rubbing the porridge against the side with a wooden spoon to help it cook.
Continue cooking for a further couple of minutes. Serve as a side dish with meat dishes.
