This is used for: rendang (spicy red slow-cooked curry, typically with beef), balado (spicy tomato-based stir fry) or even to give a kick to a simple nasi goreng (fried rice).

Ingredients:

250g Shallot
125g Garlic
300g Red chillies
1 tsp salt

Method:

Add the shallot and garlic to a stone mortar and pound to a smooth paste with a heavy pestle.

Next add the chillies and pound once more until you have a smooth paste.

Mix in the salt then to a jar and store in the refrigerator if not using immediately, it will keep for 2 weeks. You can freeze for longer-term storage.
